Activity summary

LGB also known as beta-lactoglobulin is a small globular protein with a mass of approximately 18 kDa. It is predominantly expressed in the milk of ruminants including cows sheep and goats. The protein is considered a major whey protein and it forms small soluble aggregates in milk. LGB exhibits the ability to bind hydrophobic molecules which suggests it plays a role in transport or storage of lipophilic molecules within milk.

Biological function summary

This protein functions in the stabilization and transport of fatty acids and other hydrophobic molecules. LGB does not form part of a larger protein complex but can dimerize under certain conditions. It has a notable affinity for binding ligands particularly vitamins and flavor compounds which may significantly influence nutritional and sensory qualities of milk and dairy products.

Pathways

LGB's functional role suggests involvement in metabolic and nutritional pathways related to lipid transport and digestion. It has an indirect relationship with the digestive enzyme lipase as LGB-bound lipids become more accessible for digestion. Furthermore its lipid-binding characteristics support its involvement with fatty acid metabolism playing a role similar to serum albumin in circulating lipid constituents.

Associated diseases and disorders

LGB is most commonly implicated in food allergies particularly cow's milk allergy. Its antigenic properties make it a significant allergen in humans especially young children. Through this context LGB relates to the immune response proteins such as immunoglobulin E (IgE) which mediate allergic reactions. Understanding these interactions between LGB and immune components remains essential for developing hypoallergenic milk products.
