Ovalbumin also known as egg albumin is a significant protein found in egg white representing about 54% of the protein content in this part of the egg. It has a molecular weight of approximately 45 kDa. This protein is synthesized in the oviduct of birds and deposited in the egg white where it fulfills several roles. Ovalbumin is a glycoprotein meaning it has carbohydrate groups attached to the polypeptide chain. Researchers commonly use it as a model antigen in immunology studies and as a standard in protein markers because of its known properties.
Ovalbumin functions as a storage protein in eggs providing essential amino acids for the developing embryo. This protein also plays a role in binding metal ions and vitamins acting as a nutrient reservoir. It is not part of a complex existing as a single polypeptide chain. Ovalbumin contributes to the regulation and transport of metabolic compounds due to its ability to bind ions. These properties make it useful in various biological studies and industrial applications.
Four significant pathways involve the role of ovalbumin in living organisms. These include the regulation of protein adsorption and the nutrient reservoir activity pathway. Ovalbumin's ability to serve as a nutrient source directly relates to these pathways ensuring proper nourishment during embryo development. It operates independently of other proteins in these pathways emphasizing its role in providing and regulating nutrients without the aid of additional complexes.
Ovalbumin has connections to some allergic responses particularly in individuals with egg allergies. It acts as an allergen capable of provoking immune reactions. A Goat Anti-Rabbit IgG (Alexa Fluor® 488, Goat Anti-Rabbit IgG H&L (Alexa Fluor® 488) preadsorbed ab150081) at 1/2000 dilution was used as the secondary antibody.
