Pancreatic alpha amylase assists in the breakdown of large polysaccharides into smaller maltose units. This enzyme can act independently and does not require a complex to function effectively. It carries out its activity primarily in the small intestine where it continues the digestive process initiated by salivary alpha amylase. This amylase protein ensures that starches consumed in the diet are converted into forms absorbable by the body contributing to overall metabolism.
